Ginger Asian Slaw
I started dinner tonight following a recipe which I quickly abandoned. I was happy I did as I ended up with a really fresh, light salad which is perfect for a warm summer night!
Ginger Dressing
1 tsp grated lime zest
3 tbsp fresh lime juice
2 tbsp sesame oil
2 tbsp rice wine vinegar
1 1/2 tbsp grated ginger
1 tbsp jalapeno
5 tbsp soy sauce
4 tbsp honey
Mix all ingredients together and refrigerate.
4 cups napa cabbage
4 cups red cabbage
4 carrots, grated
1 red bell pepper
1/4 cup mint
1/4 cup cilantro
3 tbsp roasted peanuts
Chop the above ingredients and mix to combine. Add the ginger dressing, toss and serve.
